They say I eat too many burritos. I say it is not possible. But I choose one above all others: Los Garcia Mexican Fusion’s al pastor burrito. What started as a single food truck has taken over the entire parking lot. It’s now a compound, featuring two trucks, a dining patio decked out in lights, and an indoor dining room (no table service) with murals of candy skulls.
Los Garcia has a powerful menu, streamlined to exclude any mediocre options. But the al pastor burrito lures me there and I ignore the other items. Lebanese immigrants brought the al pastor method to Mexico. Think shawarma. The tall skewer of pork chunks layered with spices and topped with the top half of a pineapple, slowly turning against a flame and glistening with the magic that is pork fat.
When you order, the chefs shave the meat with a machete-like knife and pack it into a soft, flavorful tortilla. They wrap the meat with seasoned rice, peas and carrots, and a choice of black or refried beans. They also offer about 10 different sauces, hot and mild, if you want an extra kick of flavor. – Brian Lance
